Black Currant Smoothie

Recipe

Ingredients:

  • 2 BL pineapple puree
  • 3 BL passion fruit puree
  • 2 cl sugar syrup
  • 2 cl pineapple juice
  • 9 blackcurrants
  • 3 cl cream yoghurt

Bar Accessories:

  • Long drink glass
  • Cocktail shaker
  • Ice cubes

Put the pineapple puree, 2 BL passion fruit puree, pineapple juice and 1 cl sugar syrup into a cocktail shaker and shake well. Strain this mixture into the long drink glass. Clean the shaker and pour the currants, 1 cl sugar syrup and the cream yoghurt into the cocktail shaker and shake well. Add this mixture to the glass, which is already half full. Stir the liquids together lightly to create an interesting colour gradient. Before serving, add the last bar spoon of passion fruit puree to the long drink glass and serve the mocktail.
