The preparation of the Bellini recipe is quite simple. First pour the peach puree into a champagne glass. Then pour a sparkling wine of your choice (sparkling wine, champagne or prosecco) into the champagne glass up to the rim. If you like, you can still stir the drink lightly with a bar spoon. Then the cocktail is ready and can be served or enjoyed by yourself.

Recipe peach puree

  • 3 peaches
  • 1 cl lemon juice
  • 1 cl sugar syrup

Put all the ingredients in an electric mixer one after the other, together with ice cubes, and mix well. After about 30 seconds, a puree will have formed. You can now use this puree to prepare the Bellini.

The Bellini Cocktail is pleasantly fresh and fruity. The interplay of champagne and the sweet peach puree is unique. The drink is often served as an aperitif or digestif. Alternatively, you can also serve the Bellini as an accompanying drink to a meal.

The mild taste is also suitable for those who do not like the taste of alcohol. The aromas of peach and the pleasant fruity sweetness are clearly in the foreground. The drink can most easily be compared to a French 75 and Mimosa. Other fruity cocktails are called Tom Collins, Sex on the Beach, Cosmopolitan or Gin Fizz. Strong alcoholic flavours, as in the Old Fashioned, Negroni, Dry Martini or Long Island Iced Tea, are not to be tasted.

Background information

The Bellini was originally invented in Italy. In its classic recipe, the drink is made with prosecco and peach puree. There were plenty of both ingredients in Italy. The Bellini was invented on a balmy summer evening in Venice in the 1940s. A bartender tried quite a few cocktails until he found the “optimal” mixing ratio. This was 2:1. 2 parts Prosecco, one part peach puree. Over the years, the drink became more widespread and more famous. In France, a bartender decided he preferred to use high-quality, regional champagne for the preparation.

This makes the Bellini considerably more expensive, but in our eyes also more pleasant in taste. For this reason, we also decided to use champagne in our recipe. Today, the Bellini is known as a classic aperitif alongside the French 75, Hugo, Aperol Spritz and the Mimosa. It has a low alcohol content and pleasant fruity-sweet flavours. In addition, the drink is very easy to prepare. For this reason, you can also serve a Bellini at large family celebrations, weddings or birthdays. In that case, however, it is better served with inexpensive sparkling wine.
