Bee’s Knees Cocktail Recipe
- 6 cl gin
- 3 cl lemon juice
- 2 cl honey syrup
Step by Step Guide
- Pour both the gin and the lemon juice and honey syrup into a cocktail shaker, one after the other, and add a few ice cubes.
- Shake the shaker for about 15 seconds and then pour the drink into a martini glass.
- Now just grit it with a lemon zest and serve.
- The Bee’s Knees cocktail is quick and easy to prepare.
First you should decide whether you want to buy honey syrup or make it yourself. If you choose the latter, pour 3 parts honey and one part warm water together and stir until the honey has completely dissolved and a viscous liquid forms. You can store this syrup in the fridge for about 5 days.
Now for the preparation of the Bee’s Knees Cocktail. Measure out all the ingredients with a jigger and pour them one by one into a cocktail shaker. Add a few ice cubes and shake the shaker until it mists up on the outside (after about 15 to 20 seconds). Now you can strain the drink through a bar strainer into a martini glass and then serve. And this is how easy and quick you can prepare the Bee’ Knees cocktail.

34 Reviews
The Bee’s Knees cocktail is all about the interplay of sweet and sour and the alcoholic notes of the gin. The honey syrup provides a really pleasantly sweet flavour that is countered by the tart, fruity notes of the lemon juice. This interplay is pleasantly complemented by the sharp and alcoholic notes of the gin, giving a really rounded cocktail in the end. Try the drink for yourself and adapt the recipe to suit your needs until you like it too!
How the Bee's Knees Cocktail was created
The Bee’s Kees is a cocktail from the time of prohibition. The drink, made with lemon juice, honey syrup and gin, is said to have been invented by Austrian-born Frank Meier in 1920. Meier worked in a Paris bar in the 1920s and actually only wanted to make a gin sour. However, when he realised he had no more sugar, he simply resorted to honey. Thanks to its intensely sweet taste, sugar and honey were still used at that time to mask the inferior taste of the gins of the time.
Nowadays, of course, this is no longer the case. All the gins you can buy today are of high quality and come in a variety of flavours, allowing you to add your own special touch to the drink. Simply choose your favourite gin and prepare the drink at home!
How the name evolved
By the way, the unusual name of the cocktail originated from a saying of the time. The statement “bee’s knees” was a popular slang to refer to something excellent or outstanding. Others claim that the name “bee’s” derives from the ingredient honey. The slightly yellow-golden shimmering colour may also have been decisive for the naming.
One of the simplest drinks of its time
The Bee’s Knees Cocktail is one of the easiest cocktails to prepare. The drink is made from just 3 different ingredients and is therefore particularly suitable for cocktail evenings, parties or other occasions where you have to serve a lot of people. With a bottle of gin, a load of honey syrup and lots of lemons, you can quickly whip up drinks for all your thirsty guests.
Why not make your own simple honey syrup?
Honey syrup is one of the three main ingredients in the Bee’s Knees cocktail. You have the option of simply buying honey syrup or making it yourself. There are many advantages to preparing the syrup yourself. You can decide for yourself the quality of the honey used and how it tastes. In addition, it is usually much cheaper to make the syrup yourself. The disadvantage of home-made honey syrup is that it usually has a much shorter shelf life than purchased syrup.
